Mills Birthday Cake --- Chocolate Mayonnaise Preheat oven to 350° Grease and flour a 9 x 13 inch pan. 3 c. flour 1- 1/2 c. cold water 6 Tb. Cocoa 1 Tb. baking soda dissolved in the cold water 1- 1/2 c. sugar 1- 1/2 c. mayonnaise (NOT light) 1- 1/2 tsp. vanilla Mix flour, sugar, and cocoa. Add vanilla, then water and baking soda. Then GENTLY fold mayonnaise in last. Pour into prepared pan. Bake until toothpick inserted into center comes out clean (30 to 40 minutes). FUDGE FROSTING 1/2 c. butter 1/2 c. milk (I use evaporated) 1/2 c. cocoa 2 c. sugar In a heavy saucepan, melt butter over low to medium heat, taking care to not burn. Add cocoa, then milk and sugar. Stirring occasionally, bring to a rolling boil. Boil for 1- 1/2 minutes. Cool; beat and spread on cooled cake. If frosting begins to harden too quickly, add evaporated milk, about one tablespoon at a time, until desired consistency is reached.
